It looks like you are digitizing the chroma signal.

I think so. The color information is a modulated carrier at about 4MHz.
A sharp 3MHz filter will remove it.. of course that influences the
resolution.

A better method is to use a monochrome camera or a SVHS camera. SVHS
provides separate gray (luminance, Y) and color (chroma, C) signals.
