My group uses IDL (Interactive Data Language) by RSI
(Research Systems, Inc.).  IDL is a complete programming language
and development environment specifically aimed at image processing
and similar applications.  Although the learning curve is steep,
it's worth the effort.  We go from raw video data through
fairly complex analysis to presentation
graphics in one package.
There's a point and click interface for IDL called ENVI,
but I haven't tried it.

Although this is the full version, it times out after 7 minutes (long
enough to run the demo).  RSI provides a license file to complete
