Green Mountain Summer Ale

Combine wheat, barley and gypsum in 8 quarts of 130F water. Allow a 30 minute protein rest. Add 4 quarts 200F water to raise temp to 150F. Hold for 15 minutes. Raise temp to 158F and hold for 30 minutes. Mash out at 168F for 5 minutes. Sparge with 170F water to collect 6 - 6 1/2 gallons. Boil for 90 minutes.
