Stir-Fried Spring Greens with Garlic ()
    Materials:
    450 g (1 lb) tender spring greens, washed and drained
    1 teaspoon salt
    4 tablespoons vegetable oil
    2 teaspoons vegetable oil
    1/2 teaspoons sugar
    1 tablespoon water


    Preparation time: 10 minutes, plus soaking
    Cooking time: 3 minutes

1. Cut the spring greens into 2.5 cm (1 inch) lengths. Cover with water, add the salt, and leave to soak for 10 minutes. Drain thoroughly.

2. Heat the oil in a wok until smoking. Add the garlic, stir-fry for a few seconds to flavour the oil, then add the greens, sugar and water. Stir-fry for 1-2 minutes, until the colour changes to transparent green. Transfer to a hot serving dish and serve.
