Steamed Scallops in Black Bean Sauce

A meal for 4-6, ideal for those who love seafood. Because of the long South-East coastline seafood is plentiful and is often found served with noodles. The scallops, flavourced with a savoury black bean sauce, make an interesting and unusual starter.


Steamed Scallops in Black Bean Sauce ()
    Materials:
    12 scallops, on their shells
    2 tablespoons vegetable oil
    2 tablespoons salted black beans, soaked, drained and crushed
    1 chilli, seeded and finely chopped
    1 garlic clove, crushed
    2 spring onions, finely chopped
    2 tablespoons soy sauce
    2 teaspoons sugar
    3 teaspoons chicken stock
    2 teaspoons cornflour


    Preparation time: 5 minutes
    Cooking time: 8 minutes

1. Steam the scallops on their shells for 5-6 minutes.

2. Heat the oil in a wok and add the black beans, chilli, garlic and spring onions. Stir together, then add the soy sauce, sugar and chicken stock blended with the cornflour. Stir until thickened and pour over the hot scallops. Serve immediately.
