White wine pasta sauce with chicken

1 1/2 cups milk
1/2 cup white wine
8 tbsp sifted flour
2 tbsp butter
1 tsp salt
1 tsp pepper
1/4 tsp fennel seed
1/4 tsp oregano
2tbsp finely chopped onion
1tbsp finely chopped celery
2tbsp finely chopped mushrooms
1 cup skinless, boneless chicken breast... 3/4" cubes

Brown chicken.
Add all ingredients into a pot and simmer for 20 minutes.

This is great with Rotini or Rigotoni, but you favourite pasta will do.

I made this up in class one day, and haven't had the time to play with it
since, so any suggestions, or ideas would be gladly accepted.
