Autumn Colors Salad
aka Sweet Potato/Apple Salad

about 4 cups peeled, cubed sweet potatoes or yams
1 apple, skin on, chopped
2 stalks celery, sliced
1 small red onion, chopped
1 teaspoon fresh ginger, grated
rice vinegar to taste

steam potatoes til soft, not mushy
toss all ingredients lightly
dress with vinegar to taste
chill
