Fatfree Fruit Muffins

1 1/4 cup flour, white or wholewheat
1 cup oat bran or oatmeal
1 1/4 teaspoon cinnamon
1 tablespoon baking powder
1/2 cup evap skim milk ( or soy or rice milk)
1/2 cup defrosted apple juice concentrate
1 egg or 2 egg whites or equivilent
1 ripe banana, mashed or 1/2 cup applesauce
1 cup fruit, berries, diced peaches, pears, apples, raisins, whatever
1/2 cup nuts if you like

mix dry ingredients

stir together wet ingredients except 1 cup fruit
blend together wet and dry,
add fruit and nuts

bake 425 for 17 minutes, watch carefully, dry if overcooked.
