[Fruit in Gingered Plum Wine]

1/4 Cup plum wine
2 tablespoons preserved ginger in syrup, diced, plus 1 tablespoon syrup
1 tablespoon plum sauce 1 small pineapple, cut into 1/2-inch cubes
1 can (11 ounces) mandarin oranges, drained
3 kiwifruit, peeled and cut into chunks or wedges
Mint sprig for garnish

Method

Combine the plum wine, preserved ginger, ginger syrup, and plum sauce in a serving bowl. Add the pineapple and mix well. Add the oranges and kiwifruit and mix gently, just until they are coated with the plum wine mixture. Garnish with mint sprig.
