Lemon Tofu and Spinach
Bake
Recipe adapted from Vegan Meals for
one or Two
(Makes 3 Servings)
1- ¼ cups thawed, frozen spinach
(drained) (I just used one bag of fresh spinach)
¼ cup chopped onions
2 Tablespoons lemon juice
1 cup crumbled firm tofu
2 teaspoons granulated garlic
½ teaspoon red pepper flakes
1 cup crushed (white corn) tortilla

Preheat oven to 375 degrees. In a medium-sized bowl, combine all ingredients, except chips, and mix well.
Place a thin layer of chips in baking dish. Cover with spinach mixture and top with remaining chips. Bake at 375 degrees for 15 minutes and chips are starting to turn a little brown or until set.
