Chocolate Dream Pie
Recipe adapted from Vegan Meals for
One or Two
When I make this I prefer to use a premade pie crust, there are several that are vegan, and they are very tasty.

Crust
¼ cup melted
vegan margarine
1 cup vegan graham
cracker crumbs
2 tablespoons of
maple syrup

Filling
1 – ¼
cups chocolate or carob chips
2 – ¼
cups silken tofu
2 Tablespoons of
maple syrup
Pie Crust
Preheat oven to 375
degrees. In a medium-sized bowl, mix margarine, crumbs, and 2
tablespoons of maple syrup. Press into a 9-inch pie tin and bake at
375 degrees for 5 minutes or until golden. Place pie crust in the
refrigerator and allow to chill

Filling
Melt chips in a
medium-sized pot; stir for smooth consistency. Set aside when melted.
In a blender, combine tofu and 2 tablespoons of maple syrup and blend
until smooth. Add melted chips and blend until smooth. Pour into pie
crust. Refrigerate until firm, at least 45 minutes. Optional: Add
additional chocolate chips on the top after pie has been in the
refrigerator for about 20 minutes
Notes: Since I have
limited pots, I melted the chips in the microwave and they turned out
just fine. When I made this recipe I also didn't have a blender, so I
used a wire whisk and some elbow grease, and it turned out just fine.
I found this recipe to be a huge success, so I decided to try it with limes instead of chocolate chips (to make key lime pie)... this didn't turn out so well.
