Dear Andrew:

I think time limited arithmetic tasks performed concurrently with 
speech has been used with some success.  You might want to take a 
look at the following (which mentions the approach in passing):

     Brenner, M., Branscomb, H.H. and Schwartz, G.E. (1979) 
     Psychological Stress Evaluator: Two tests of a vocal measure. 
     Psychophysiology, 16(4), 351-357.
