Chapter 6.1 is a good introduction to Hidden Markov Modelling - by Lawrence 
Rabiner.

system. Kluwer Boston 1989

A new book by Lawrence Rabiner was recently released. I have not seen it yet 
but I'm sure it is interesting for your purposes.
