Gotta Be Mead

2.5 lbs clover honey
4 tsp dried orange peel
1 tsp cinnamon
.5 tsp ground ginger
.25 tsp ground cloves
1 tsp acid blend
1 tsp yeast nutrient
.5 tsp irish moss
1 pkg Doric wine yeast

Add all ingredients, except honey, to 1 qt water. Simmer 10 mins. Add 2 qts water and bring to a boil. Add honey, boil 15 mins, skimming foam. Cool, add yeast and aerate well.

Makes 1 gal.

OG = 1.096
FG = 1.024

Let age 1 year in bottle.
