With so much salmonella about, no-one in their right minds would suck eggs
now. The purpose of the exercise is to remove the contents of the egg
through the tiniest of pin-holes for the purpose of turning the empty but
almost unscathed shell into a work of art, i.e. decorating it.

The alternative approach is to blow rather than suck, but this is harder
work (it's easier to get a bigger pressure difference by sucking than
blowing) and therefore usually requires one of the holes to be somewhat
bigger than with the sucking method. Still, a small price to pay for
not getting that goopy raw egg in one's mouth - yuck. Some people like
raw egg, and they would swallow. But those who don't would spit it out.
It's immoral to waste food, and with the blowing method we always used the
goop for omelettes or cakes. It just seems horrid to do that if it's been
in someone's mouth.
