For low-cost pressure sensors, try force-sensitive resistors.
They come in wide variety of shapes and sizes, and are perfect
for mounting on grippers or robotic fingers.  They take a few
grams of mass to first register a contact, however, so they
wouldn't be effective for sensing a (very) light touch.  Contact:

They offer a sample kit that includes 5 of the thin-film
resistors for *free*. They'll be more likely to send it to you
if you are working on a project that might actually lead to the
development of a commercial product.  Otherwise, the minimum
order is in the line of $50.
