A hot wire annarometer(sp??) in a bridge will have the best response time
of anything I know of. Just use real fine wire as two oposite legs of a
Wheatstone bridge and hold the other at a know temperature and Ice bath
come to mind. If the air is moving you will have to take that into account.
It won't be simple but it will be fast.
