Call Omega, they've got Infrared thermocouples (you provide the low
thermal mass surface with emissivity between 0.8 and 1.0) starting at
$200, with meters/indicators with response times around 80 ms and
resolutions to 0.01 degrees, though the accuracy is around 2% of the
nominal range.

They also have fine gage (down to 1 mil) thermocouples with response
times down to 50 ms in still air!
