Try opening up a standard ($12) mouse that uses shaft encoders riding
on the ball.  Remove the ball, and place a small weighted lever on
the end of each shaft (making sure is has 360degree clearance).  The
weights will track the force vector (mostly gravity) and give you reading
on your "sense of balance".

P.S.  If you try this, let me know how it turns out.  Someday I want to
install this type of thing in my RC chopter to help with automagic stabilizing.
