These questions are about like asking:

How do I do image processing? Can I tell what is in an image using image
processing?

You might take a look at the book:

Medical Imaging Systems, by Albert Macovski, Prentice-Hall 1983.

It covers a number of medical imaging modalities and provides enough
information that you could better approach questions of noise, type, and
scale.

Yes, you will have local differences in noise types and magnitudes.

The noise you get will depend a great deal on the imaging modality.
