Hello Gunnar,

There are many books on speech and in general signal processing. The more
well known are:
Rabiner & Schaefer: Something with "Digital and speech"(forgot the title)  
                    This has long been a standard and probably still is,
                    but is already quite old.
Deller, Proakis & Hansen: Discrete-time processing of speech signals
                    New book, very good and comprehensive. Deals also with
                    HMM and Neural nets used for speech processing.
Oppenheim & Schaefer: Discrete-time signal processing
                    General basics book on signal processing.
I think I would start with Deller, Proakis & Hansen.
