While I was at school I was required to use a textbook called
"Fluid Power Applications" or something like that.  I can't remember
the exact title and the book is at home and I am at work.  The
authors name is Anthony Esposito (sp?).  It is a very good book
it covers both Hydraulics and Pneumatics in a very down to earth
manner, but it is a textbook so it may be a little pricey.  Try a 
university bookstore and look in the Mechanical Engineering or
Engineering Technology Courses for fluids classes.

If you want more detail on this book send me an e-mail and I will
get it to you.  If you have any specific questions about hydraulics
let me know I have a little experience with the subject and I know
many people who have a lot of experience.
