I suggest an oldie but goodie: R. E. Bellman and S. E. Dreyfus,
Applied Dynamic Programming, Princeton University Press, 1962.
The book was written when both authors were still at RAND and
was one of many publications. The niche of this book is for
those who who want to use DP with understanding but not become a
scholar in that subject.
